If you love ribs like James loves ribs, then you'll love James Perkins Jr.'s family favorite receipe, Perkins style - grilled spare ribs!
James starts with approximately 4 lbs of Echo Valley Farms, organic pastured, non-GMO, antibiotic, hormone and steroid free spare ribs.
Sprinkle McCormick Grill Mates, Smokehouse Maple on ribs, until covered.
Add a pinch of garlic powder and salt.
Next, generously apply Famous Dave’s, Ribs Rub, until all sides are covered.
Wrap ribs in aluminum foil, fold and crease the edges so no heat, steam or juices can escape.
Preheat grill to low to medium heat, approximately 350 degrees Fahrenheit.
Place ribs on rack for indirect heat for a total of 40 minutes.
Rotate and flip every 10 minutes to ensure ribs are cooked evenly.
After 40 minutes, remove from heat. Carefully unseal the foil and lather ribs in Sweet Baby Rays BBQ sauce. Be careful as escaping steam will be very hot!
Reseal foil and let sit for 15 mins.
Reopen foil and slice ribs between the bones. Pare with a side of fries, corn on the cob or another side of your choice and serve to your lucky family and friend

0.80 to 1.00 lb 1.5" thick Echo Valley Farms bone-in pork chop
4 tablespoons Walker & Sons, "Slap Ya Mama" cajun seasoning
Slice pork chop widthwise, halfway thru chop to the bone. Spread chop at cut and apply aprox 1/2 tablespoon seasoning.
Apply remaining seasoning to all sides of chop and press seasoning to the meat. Let stand aprox 5 mins.
Place chop in center rack of air fryer at 400 degrees for 16 minutes for medium rare, 18 minutes for medium and 20 minutes for medium well done. Flip chop after 8, 9 or 10 minutes. After appropriate time, remove from air fryer and let stand on plate for 3 to 5 minutes. Pare with dirty rice or vegetable of your choice.
